Chef Tyler Sailsbery is the executive chef and owner of The Black Sheep Restaurant in Whitewater WI.
Tyler received some of his training through Fox Valley Technical College’s Culinary Program, and further honed his skills while working for caterers and restaurants throughout the Fox Valley. His focus on farm to table meals stems from his rich agricultural history-a combination of growing up on his family’s small farm and his experience with the Wisconsin FFA association.
Tyler enjoys adapting and combining French and Italian classics to provide customers with a twist on traditional favorites. With the local supply of lamb in Walworth County, you will always see a lamb dish or two on his seasonal menus. Tyler believes food should be fresh, local, simple and unpretentious.

Sweet Dumpling Squash
Roasted and stuffed with Pinn Oak Ridge farms lamb sausage kale and pecans
Whitewater Rush - a semi-dry white wine with intense grape aromas
Fire roasted Heirloom tomato soup
Topped with crème fresh and bean sprouts
Maiden Blush - a semi-dry blush wine with a strong strawberry aroma and subtle floral and citrus tones
Chicken Brat (AS SEEN ON THE FOOD NETWORK)
Placed over micro greens with cranberry chutney
Blanc de Crescent- a dry white wine with a hint of apricot and clove
Burgundy Smoked Short Rib
Served over a beet risotto
Release 4 - a dry red, firmly textured with aromas of fresh berry and oak
Fresh-made gram crackers and homemade infused marshmallows
Ouro Classico (White Port)- Oak aged for two years, creamy dried fruit and roasted nut
Separate tickets are required for this event. Tickets are $75 per person and include the farm tour, dinner, all beverages, taxes, tips and gratuities.
Shuttle service will be available at 4pm and 5pm from Lake Lawn Resort. If you drive, parking is available along Pinnow Road.
